Baccala alla Romana


This is one of my favorite dishes from childhood. My Nonna would make this and pair it with a heap of bread to soak up the sauce, and to me it was heaven. It's salty, sweet, and charged with nutrition (and it's so easy to make).

What you'll need:

-four cod fillets
-5 large tomatos
-1 white onion
-1 cup of raisins (I use equal parts gold and regular)
-1 small four ounce can of organic tomato extract
Extra Virgin Olive Oil

Peel and chop the whole tomatoes and set aside. Using about a half cup of extra virgin olive oil, sautee the onions in a large skillet. Finally add the rest of the ingredients and turn on medium. The cod, (if fresh) because it's flaky, will break up as it soaks the tomato sauce up. That's fine. You want it to. You won't need to season it much except with some sea salt or pepper. The cod is like a spunge and will naturally soak up the flavors of the raisins, tomatoes and onions, making for one delicious dish. You'll let it cook on medium for about twenty minutes, or until the fish is throrougly cooked through and soaked by the tomato sauce.  To authentically serve it, it should be eaten lukewarm or cold (I like it on the cold side).

I know I know, cold cod fish. Don't knock it till you try it! It's salty, sweet, and absolutely flavor perfection! And it's healthy for you.

The fish and olive oil provide healthy fats as well as a good dose of Omega 3 fatty acids, while raisins are packed with phenols, which act as antioxidants in the body. Raisins are also a main source of boron which is key in fighting osteoperosis and other bone diseases.

Trust me, this is a dish that packs a nutritious and flavorful punch that can't be beat.
